As the guy who actually came up with that double concave keel shape for SUP Foil boards I can tell you the following:  I decided to put that keel in there to keep the short Indiana ProFoil supboards paddling straight.   They however made the Boards stick when trying to paddle/pump up onto the foil.  For winging you actually only notice that stickiness in really light wind where you are using the pumping more than the wing to get up and flying.

Regarding the Fanatic board.  It will absorb the impact from touching down, but it will stick a little and it will also start tracking in the direction it touched down.

Directional stability makes a lot of sense, but I'm not convinced that the payoff is worth it. The hardest thing for me about SUP foiling (especially downwinding) is the pop-up. Surely the more help you can get from your board shape here the better. Bear in mind I'm relatively new to all this and am NOT a board designer, so I'm happy to be proven wrong

This is a link to a video sent me by Jimmy Lewis that shows how a deep double concave hull causes a board to slow down so dramatically on touchdown that it throws the rider 'over the handlebars' so to speak. I've attached a picture below that shows the board's hull shape
